Bratwurst & Sauerkraut



Heat a skillet on medium high heat and add some oil and butter. Sear some nice bratwurst sausages for about 5 minutes on all sides or until they reach a nice charred brown color. Completely drain your canned sauerkraut and toss it in with your sausages. Season with salt and pepper, mix well, garnish with some fresh parsley and enjoy!

Grilled Lamb Chops with Cabernet Sauce





In a bowl mix together some cabernet wine, a little flour, butter, beef stock, salt, pepper, paprika, onion powder, and garlic powder; set aside. Fire up the grill and season your lamb chops with salt, pepper, and paprika. Grill your chops on both sides for about 6-8 minutes (for a nice medium / medium well) while brushing on your sauce; set aside. Heat a pan on medium high heat, pour in your cabernet sauce, heat while stirring until your wine reduces. Plate your chops and sauce in a bowl like so and enjoy!

Pan Seared Sea Scallops with Veal Jus





Heat a pan on medium high heat and add some oil and butter. Season your sea scallops with salt and peppepr and sear on both sides for about 2 minutes or until it reaches a nice golden brown color. Take your scallops out and add to the pan a little veal stock. Heat that up for about 2 minutes, plate your scallops along with some mashed potatoes, pour on some of your veal jus, and enjoy!

Honey Bourbon Glazed Salmon





In a bowl mix together some honey, bourbon, lemon juice, ketchup, mustard, worcestershire sauce, vinegar, salt, fresh ground black pepper, onion powder, and garlic powder. Heat a pan on medium high heat and add some oil and butter. Season your fish with salt and pepper and sear your fish on both sides for about 4 minutes to get a nice brown char. Brush your salmon on both sides with your honey bourbon glaze and continue cooking for about 6-8 minutes while brushing glaze on both sides. Enjoy!

Flavorful Tuna Fish Sandwich





Drain your canned tuna fish in the sink very very well. Mix your tuna in a bowl with some mayonnaise, old bay seasoning, onion powder, crushed black pepper, chopped celery, celery seed, and fresh squeezed lemon juice. Place between two pieces of bread along with some mixed greens and enjoy!

Deviled Eggs





Heat a pot of water on medium high heat and make some hard boiled eggs. After they have cooled peel and remove the shells and cut your eggs in half lengthwise. Remove the yolks and mix in a bowl with some mayonnaise, sweet relish, mustard, salt, pepper, and paprika. Put a nice scoop of your egg yolk mixture into your egg white halves, sprinkle with some more paprika and enjoy!

Creamed Spinach Stuffed Mushrooms





Preheat your oven to 400 degrees. Break the stems off of your mushroom tops and clean your tops well. Season your mushroom tops with salt and pepper and bake in the oven for about 8 minutes; set aside. Heat a pan on medium high heat and add lots of butter. Saute your spinach while stirring for about 2 minutes. Add some heavy cream and cream cheese and season with salt, pepper, onion powder, and garlic powder. Cook while stirring for about 6-8 minutes or until nice and smooth. Put some nice sized scoops of your creamed spinach into your mushroom tops and pop them back in the oven for about 3-4 minutes. Plate and enjoy!

Szechuan Shrimp





Peel your shrimp then make your szechuan sauce. In a bowl mix together some ginger, vinegar, ketchup, red pepper flakes, soy sauce, and honey. Heat a pan on medium high heat and add some oil and butter. Cook some sliced okra for about 1 minute while stirring. Add your szechuan sauce and cook while stirring for about 1 minute. Toss in your shrimp and cook while stirring for about 7-10 minutes or until your sauce just about evaporates and bubbles. Enjoy!

Reuben Sandwich





Heat a pan on medium high heat and add some oil and butter. Place a nice pile of corned beef in the pan and top with swiss cheese, cook until cheese starts to melt. Lightly toast some bread and butter it, also spread some thousand island dressing on your bread. Now build your sandwich with layers of corned beef and your melted cheese, sauerkraut, thousand island dressing, and some more corned beef. Enjoy!

Pineapple Teriyaki Chicken Sandwich





Fire up the grill and season your boneless chicken breast with salt and pepper then brush your chicken with teriyaki sauce. Cook on the grill for about 10-15 minutes on both sides or until there is no pink inside; periodically flipping and brushing with more teriyaki sauce. With about 3 minutes remaining on your cook time top your chicken a slice of swiss cheese and continue cooking until the cheese starts to melt. Slice a pineapple and grill for about 3-5 minutes on both sides. Build your sandwich like so with green chili's and sliced red onions. Enjoy!

Stuffed Pork Chop





Cut a deep pocket in your pork chop and season it on the inside and out with salt, fresh ground pepper, and paprika; set aside. Cook your stove top cornbread stuffing mix according to packaged directions and set aside. Preheat your oven to 400 degrees. Heat a pan on medium high heat and add lots of butter. As the butter starts to melt pour in a little flour and whisk thoroughly to make a roux. Pour in a little beef broth, season with onion powder and continue whisking until gravy has met your desired consistency; pour out and set aside. In the same pan add a little oil and butter, stuff your pork chops with your stuffing and sear on both sides for about 6-8 minutes to get a nice brown char on both sides. Bake your stuffed chop in the oven for about 8-10 minutes or until there is no pink inside. Heat up your gravy, pour it on top of your chop, serve with some sides and enjoy!
