Portabella Mushroom Cheeseburger


Slice your portabella mushroom into a pattie size. In a zip lock bag add some balsamic vinegar, salt, pepper, minced garlic, onion powder, and ground cumin. Wipe your mushroom slices with dry paper towels to remove the grit. Put your mushroom slices in your balsamic marinade and let it marinate in the fridge for about 20 minutes. Heat a pan on medium high heat and add some oil. Sear your mushroom patties on both sides for about 5 minutes. Heat another pan on medium high heat and add some oil. Slice some red peppers and onions and cook for about 5 minutes seasoning with salt and pepper. Preheat your oven to 400 degrees, and place your buns on a baking pan. Sprinkle some feta cheese on the inside of the buns and toast until the cheese melts. Build your burger like so with some fresh arugula and enjoy!



Skirt Steak Flatbread Wrap


Season your skirt steak with salt, pepper, and coriander powder. Heat a pan on medium high heat and add some oil. Sear your skirt steak for about 3-4 minutes on both sides for a nice medium well. Take your steak out and set aside. Heat a nonstick pan on medium high heat and add some tomato salsa, diced onions, minced garlic, parsley, salt, pepper, and mozzarella cheese. Cook while stirring for about 5 minutes or until your cheese has melted. Place your cheesy salsa inside warm tortillas, top it off with your skirt steak, roll it up and enjoy!

Sweet Potato Corn Cakes


Preheat your oven to 400 degrees. Puncture your sweet potatoes with a fork. Bake your sweet potatoes in the oven for about 1 hour take out and let cool. Peel the skin off of your potatoes. Mash your sweet potatoes in a bowl then mix in some melted butter, brown sugar, drained canned corn, salt, pepper, chopped cilantro, and Parmesan cheese. Form your sweet potato mixture into patties. Heat a pan on medium high heat and add some oil and butter. Pan sear your patties on both sides for about 6 minutes each or until golden brown. Enjoy! 

Spicy Avocado Chicken Salad Sandwich


Heat a pan on medium high heat and add some oil. Season your chicken breasts with salt and pepper and sear on both sides for about 6-8 minutes or until there is no pink inside. Set your chicken aside and let it rest before you break apart. In a bowl mix together your shredded chicken, some fresh mashed avocados, finely chopped jalapenos, freshly squeezed lime juice, diced red onions, sour cream, minced garlic, and fresh chopped cilantro. Mix well and place your mixture between some nice buns and enjoy!

Sausage & Pepperoni Pizza Bombs


Flatten out some biscuit dough into small circles about a half inch thick. Spoon some marinara sauce on top, then some cooked sausage, pepperoni, and mozzarella cheese. Fold your biscuit dough over your filling enclosing your filling. Preheat your oven to 400 degrees. In a bowl mix together some melted butter, garlic powder, onion powder, italian seasoning, salt, and pepper. Mix well. Line a baking pan with parchment paper and place your pizza bombs on the pan folded side down. Brush your butter mixture on top of your bombs, then sprinkle some parmesan cheese on top. Bake in the oven for about 20 minutes or until golden brown. Take them out and sprinkle a little more parmesan cheese on top, enjoy!


Cheesy Butternut Squash & Bacon Fritters


Heat a pan on medium high heat and add some oil. Cook some bacon until crisp then chop your bacon into small pieces. Chop your butternut squash finely into small pieces then wrap your chopped squash in paper towels and squeeze out the excess liquid. In a bowl mix together your your chopped squash, 2 cracked eggs, flour, parmesan cheese, salt, pepper, chives, and your chopped bacon. Mix well while smashing your squash then form into patties. Heat a pan on medium high heat and add some oil. Pan sear your patties for about 6 minutes on both sides or until golden brown. Enjoy!

Steak Tacos With Avocado Dip



First make your avocado salsa verde. In a bowl mix together some diced avocados, minced garlic, diced tomatillos, diced jalapenos, chopped cilantro, salt and pepper. Mix well then place into a blender and pulse until it's a nice dip. Season some skirt steak with salt, pepper, cumin, and taco seasoning. Heat a pan on medium high heat and add some oil. Cook your skirt steak along with some diced onions on both sides for about 4 minutes or until there is no pink inside. Take your steak out and chop into small pieces. Heat a pan on medium high heat and add a little butter. Cook your tortillas for about 2 minutes to get them hot. Take your tortillas out and put your chopped steak and onions in your tortillas, garnish with some fresh chopped cilantro, serve aside your avocado salsa verde and enjoy!

Bell Pepper & Sausage Saute



Slice some onions, red and green bell peppers. Heat a pan on medium high heat and add lots of butter and some extra virgin olive oil. Saute your sausage seasoned with some coriander powder, salt, and pepper for about 12 minutes occasionally turning. Add some more butter then toss in your vegetables and continue cooking while stirring and flipping for about 8 minutes, season with salt and pepper to taste, plate and enjoy!  

Seared Pork Chops With Watercress Sauce



Blanch a whole lot of watercress in boiling salted water, take out and set aside. Puree in a blender. Heat a pan on medium high heat and add lots of butter and some oil. Season your chops with salt and pepper and cook your chops for about 7 minutes on both sides or until there is no pink inside. Take your chops out of the pan then add to the pan some chicken stock, fresh squeezed lime juice, more butter, and your watercress puree. Cook while stirring and scraping those beautiful and delicious brown bits from the bottom of the pan. After your sauce has reached a nice consistency pour it into a bowl and set aside. Julienne some carrots, dice some red peppers and saute for about 4 minutes. Plate your chops, top them off with your watercress sauce, top that off with your red peppers and carrots, garnish with some arugula, enjoy!  

Chinese Five Spice & Lime Chicken



Preheat your oven to 400 degrees. Season your chicken with chinese five spice. In a bowl mix some fresh squeezed lime juice with some lots of butter, and chinese five spice. Heat a pan on medium high heat and add your five spice butter mix. Cook your chicken on both sides for about 7 -10 minutes to get that nice brown char on both sides. Pop your chicken in the oven to finish cooking (about 10-13 minutes). Enjoy!

Spicy Tamari Trout



In a bowl mix together some tamari soy sauce, brown sugar, minced garlic, and hot sauce, mix well. Heat a pan on medium high heat and add some oil. Brush your trout on both sides with your tamari sauce mixture. Sear your trout flesh side down for about 3-4 minutes then flip your trout, season with salt and pepper and brush on some more of your tamari sauce on top. Sear for an additional 3-4 minutes to get the skin nice and crispy. Plate with some sides and enjoy!

Deep Fried Tandoori Chicken



In a bowl mix together some lime juice, yogurt, minced garlic, tandoori masala seasoning, garam masala seasoning, cardamon, olive oil, chopped basil, fresh grated ginger, salt and pepper. Put your mixture into a large zip lock bag and put your chicken in the bag, zip lock it and mix well. Put it in the fridge and let it marinate for at least 1 hour. Pour lots of oil into a pot and heat on medium high heat for about 7 minutes, when your oil gets hot, (careful not to let it get too hot) put your chicken in the oil to deep fry for about 8-10 minutes. Enjoy!

Prosciutto and Avocado Salsa Verde Crustini



Preheat your oven to 350 degrees. Slice and nice baguette into half inch slices. Mix butter and garlic powder and butter your baguette slices. Place on a baking sheet and bake in the oven for about 6 minutes until toasty. In a blender mix diced avocados, diced tomatillas, sliced jalapenos, and fresh cilantro. Spread your salsa verde on your crustinies, then top it off with your prosciutto. 

Oven Baked Salmon With Cucumber Sauce



Preheat your oven to 400 degrees. Butter a baking dish with lots of butter and pour some liquid smoke in your baking dish, season your salmon fillet with salt, and pepper. Bake your salmon for about 15-18 minutes. While your salmon is baking make your cucumber sauce. Finely dice some cucumbers and mix them in a bowl with sour cream, yogurt, fresh chopped cilantro, and fresh chopped dill weed. Mix well, plate your salmon and top it with your cucumber sauce. Enjoy!





Creole Shrimp



Heat a pan on medium high heat and add some oil and butter. Saute some diced red or green bell peppers, chopped onions, and minced garlic. Cook for about 7-10 minutes while stirring. Add some tomato sauce, peeled shrimp, old bay seasoning, cayenne pepper, and hot sauce. Cook while stirring for 15-20 minutes. Serve on top of rice or mashed potatoes, garnish with some scallions. Enjoy!

Cream Spinach Stuffed Pork Loin



Heat a pan on medium high heat and add some oil. Saute some spinach just until it starts to wilt. Unroll your loin and spread cream cheese on one side, top with minced garlic, diced red onions, feta cheese, and your sauted spinach. Season with salt and pepper then roll your loin. Tie some string around it so it stays  closed. Drizzle some olive oil on on the loin and season with some salt, pepper, and paprika. Preheat your oven to 400 degrees, place your loin on a baking dish and bake in the oven for about 40 to 50 minutes or until there is no pink inside. Enjoy!

Huevos Rancheros



Heat a skillet on medium high heat and add some oil. Cook your sausage while breaking it up for about 8 minutes or until done. Heat another pan on medium high heat and add some oil. Drain some canned black beans and saute with some diced red onions seasoned with salt & pepper for about 4 minutes. pour some avocado salsa in a small bowl and microwave for about 10 seconds until hot. Heat a pan on medium high heat add some butter and fry an egg. Heat your tortilla in the frying pan then top with your sausage, avocado salsa, red onions, black beans, your fried egg, goat cheese, and fresh cilantro. Plate and enjoy!

BBQ Chicken & Bacon Quesadillas



Heat a pan on medium high heat and add some oil. Season some boneless chicken breasts with salt, pepper, and turmeric then pan sear on both sides for about 8 minutes or until there is no pink inside. In the same pan cook some bacon until nice and crispy. heat another pan on medium high heat and add some oil, saute some diced tomatoes, diced red onions, chopped cilantro, and diced red peppers for about 4 minutes while stirring. Pour some bbq sauce in a bowl and heat it up in the microwave for about 10-12 seconds until hot. Chop your bacon into bits, tear apart your chicken breasts and toss it with your bbq sauce then toss your tomatoes, peppers, onions, and bacon bits in with your chicken and mix a little. Place your flour tortilla in a pan and sprinkle mozzarella cheese all over it then sprinkle your chicken mixture on half of the tortilla. Heat your tortilla until the cheese melts then fold it over, take it out, cut into thirds and enjoy!
