Pan Seared Swordfish



Preheat your oven to 400 degrees, then heat a pan om medium high heat and add some oil. Season your Swordfish liberally with salt and pepper and evenly sear both sides for about 2-3 minutes to get a nice char and lock in those juices. Next pop it in the oven for about 7-10 minutes, plate on top of some fresh avocado slices, garnish with some fresh chopped cilantro and enjoy!

Chinese Five Spice Salmon



Pour some thai sweet chilli sauce and fresh squeezed lemon juice into a zip-lock bag. Season your salmon liberally with Chinese five spice. Put your salmon into that bag mix it around then let it marinate in the fridge for about an hour. Heat a pan on medium high heat and add some oil and butter. Cook your salmon for about 7-10 minutes on each side, plate your salmon along with the pan's juices, garnish with some chives and enjoy!

Grilled Spicy Thai Chicken Wings



Fire up the grill and spray it well with pam. Season your chicken wings liberally with thai seasoning and cook on the grill for about 20 minutes occasionally turning. Heat a pan on medium high heat and add some peanut oil, shallots, ketchup, sriracha, and soy sauce, season with thai seasoning and stir sauce well. Toss in your wings, coat well, plate, garnish with some chives and enjoy!

Cheesy Scallop & Bacon Spaghetti



Heat a pan on high heat and add lots of butter. Season your scallops with salt and pepper and cook for about 2 minutes on both sides to obtain a light sear then set aside. Turn you heat down to medium then cook your bacon until nice and crisp, chop your bacon then set aside. Cook your spaghetti noodles according to packaged directions, drain, then mix well with lots of butter and set aside. In the same pan add some chicken broth and cream of chicken soup, let it simmer for about 7 minutes then mix in your scallops, parmesan cheese, and some diced tomatoes, and continue to simmer for about 3 minutes. Season to taste with salt and pepper, add your bacon, mix well, plate, sprinkle more cheese and enjoy!

Chicken & Skirt Steak Fajitas


Fire up the grill and season your chicken with salt, pepper, ground cumin, and chili powder. Season your skirt steak with pepper and steak seasoning. Brush your grill well with some oil and grill your chicken for about 15 minutes or until there is no pink inside turning once. Grill your steak for about 8 minutes for a nice medium turning once. Next grill some onions, and red and green peppers until lightly charred. Thinly slice your chicken, steak, onions, and peppers and plate with some sour cream, shredded cheddar cheese, salsa, and guacamole. Build your fajita in your tortillas the way your like, enjoy!
