Cut a deep pocket in your pork chop and season it on the inside and out with salt, fresh ground pepper, and paprika; set aside. Cook your stove top cornbread stuffing mix according to packaged directions and set aside. Preheat your oven to 400 degrees. Heat a pan on medium high heat and add lots of butter. As the butter starts to melt pour in a little flour and whisk thoroughly to make a roux. Pour in a little beef broth, season with onion powder and continue whisking until gravy has met your desired consistency; pour out and set aside. In the same pan add a little oil and butter, stuff your pork chops with your stuffing and sear on both sides for about 6-8 minutes to get a nice brown char on both sides. Bake your stuffed chop in the oven for about 8-10 minutes or until there is no pink inside. Heat up your gravy, pour it on top of your chop, serve with some sides and enjoy!
