Pan Seared Sea Scallops with Veal Jus

Heat a pan on medium high heat and add some oil and butter. Season your sea scallops with salt and peppepr and sear on both sides for about 2 minutes or until it reaches a nice golden brown color. Take your scallops out and add to the pan a little veal stock. Heat that up for about 2 minutes, plate your scallops along with some mashed potatoes, pour on some of your veal jus, and enjoy!
