Oyster Po'Boy


In a small bowl mix together some flour, powdered milk, salt, pepper, chili powder, and oregano. Fully coat your oysters in this mixture and shake off access. Heat a pan on medium high heat and add some oil. Cook your oysters for 1-2 minutes on both sides until golden brown. Mix together some garlic and butter and spread that on some toasted bread. For my sandwich I put my fried oysters, red chille peppers, chives, and tarter sauce. Of course you can dress your sandwich however you like, pickles, lettuce, tomatoes, onions, cabbage, remoulade, ranch dressing, or mayonnaise are all good choices. Enjoy!

Chicken & Vegetable Tortellini With Alfredo Sauce


Cook your tortellini according to package direcrtions, drain and set aside. Heat a pan over medium high heat and add some oil. Season your boneless chicken breasts with salt, pepper, and italian seasoning. Cook your chicken breasts on both sides for about 7 minutes or until there is no pink inside. Plate and set aside. Add some butter to the pan and cook your snow peas, some chopped carrots, and onions. Season with some salt and pepper and cook your veggies for about 5 minutes or until your carrots and peas are nice and tender, plate and set aside. Shread your chicken apart by hand. Heat another pan over medium high heat and add some butter, cream, plenty of parmesean cheese, salt, pepper, and a little chicken broth. Whisk this together very well until cheese has melted and you have a nice sauce. Now turn your heat down very low and add your shredded chicken, vegetables, and tortellini, mix well until heated, plate and enjoy!

Sweet Potato - Sprouts & Runny Egg With Hollandaise



Dice your sweep potato into very small pieces, and season with salt, pepper, brown sugar, cinnamon, and a dash of nutmeg. Chop your brussel sprouts into half's or quarters and season with salt and pepper. Heat a pan on medium high heat and cook your potatoes for about 10 minutes occasionally flipping. Now add your brussel sprouts and continue cooking for another 5 to 6 minutes. Plate this mixture and set aside. Heat about a cup of water in a small pot until it starts to boil, then boil a egg (with the shell on) for about 5 to 6 minutes, then remove the egg from the water and set aside. Make a hollandaise sauce. In a small cup melt some butter in the microwave. Crack just the egg yolk into a small bowl and mix together very well with some fresh squeezed lemon juice, salt, pepper, and parsley. Now add your melted butter and continue to mix thoroughly until smooth. You may need to pop it in the microwave for about 6 seconds to get a nice smooth sauce, but be careful not to cook the egg. Peel you boiled egg and cut in half over your potatoes and sprouts, the egg should be a little runny. Top your plate off with your hollandaise sauce and enjoy a delicious and unique breakfast.

Shrimp Lo Mein



Cook your Ramen noodles in salted water until done and throw away the packaged seasoning, drain your noodles and set aside. Heat a pan on medium high heat and add some oil. Cook a few pieces of bacon until nice and crisp. Heat another pan on medium high heat and add some butter, cook your shrimp. While your shrimp is cooking season with some old bay seasoning and pour in some lemon juice, red wine vinegar, and fish sauce. Let that cook for about 6 minutes while stirring then add your noodles and cook for another minute. Put your shrimp and noodles into a bowl, break up your bacon and add that to your bowl of shrimp and noodles, garnish with some fresh cilantro and enjoy!

Grilled Chicken Salad Wrap



Fire up the grill, brush your boneless chicken breasts with some oil and season with some salt and pepper. Cook on the grill for about 5 minutes on both sides or until there is no pink inside. Dice your chicken, break up some romaine lettuce, dice some fresh tomatoes, and toss together with some shredded cheddar cheese and mix well with a a little ranch dressing. Spread your chicken salad out on some fresh tortillas and roll it up tightly. Buffalo wing sauce makes a great dipping sauce. Enjoy!

Spicy Asian Beef & Noodle Salad



Cut your steak into small pieces and marinate them in some asian chili sauce and hoisin sauce for about 1 hour in the refrigerator. Cook your spaghetti noodles (you can also use ramen noodles) according to package directions, along with some drained canned corn and thinly sliced carrots; then set aside. Heat a pan on medium high heat and add some oil, cook some sliced red onions, bean sprouts and your beef for about 3 to 5 minutes for a nice medium well or cook to your desired temperature. In a bowl add your noodles, vegetables, and your beef, toss together with some more hoisin and asian chili sauce, salt and pepper. Garnish with some fresh cilantro and enjoy!

Spicy Chicken Nachos



Punch holes in your boneless chicken breasts and marinate them in some lime juice, salt, and pepper for 1-3 hours. Heat a pan on medium high heat and add some oil. Saute your chicken along with some fresh minced garlic for about 6 minutes on both sides or until there is no pink inside then set aside. Finely chop some fresh cilantro and chop your chicken breasts into small pieces. Plate some tortilla chips and top with some warm salsa. Then top with your chicken and garlic, some sour cream, canned jalapenos, sliced red onions, and your cilantro. Enjoy!

Fried Pork Chops With A Mushroom Marsala Sauce



In a bowl scramble two eggs, then pour some flour mixed with salt and Cajun seasoning on a plate. Pour some corn meal on another plate, then season your pork chops with salt and pepper. Heat a pan on medium high heat and add some oil. Place your pork chops on the plate with the flour and get the flour on both sides then shake off the excess. Next dip your chops in the egg wash on both sides, then get both sides smothered in corn meal and shake off the excess. Pan sear your chops on both sides for about 10 minutes or until there is no pink inside, then remove them and set aside on a plate. In the same pan add some butter, Marsala cooking wine, and some mushrooms and saute for about 4 minutes scraping that beautiful deliciousness from the bottom of the pan. Plate your chops and top them off with your mushroom marsala sauce, enjoy!

Creamy Chicken Salad Sandwich



Heat a pan on medium high heat and add some extra virgin olive oil. Season your boneless chicken breasts with salt, and pepper and cook on both sides for about 7 minutes or until the chicken is cooked all the way through. Chop some celery, and in a bowl mix your chopped celery with some mayonnaise, salt and pepper. In a pot heat up some cream of chicken soup until hot. Dice your chicken and toss it in with the soup, using a slotted spoon remove the chicken from the soup and toss it with the mayonnaise and celery mixture. Put some fresh lettuce and tomato on a burger bun, and add your chicken to make one delicious sandwich.

Shrimp Chowder



Peel your shrimp but keep the shells. Heat a pan on low heat and add some butter, seafood stock, just a little bit of water, and the shrimp shells; let that simmer for about 10-12 minutes. Heat another pan on medium high heat and add some butter, your shrimp, old bay seasoning, fresh minced garlic, and pepper; cook for about 5-7 minutes, remove from pan and set aside. Heat the same pan on medium high heat and add some butter and flour. Cook while stirring for about 4 minutes (or until thickened) then add your shrimp, your stock (drained from the shrimp shells) and a little tomato paste. Cook while stirring for an additional 4-6 minutes, season to taste with salt and pepper, garnish with some chives and enjoy!

Balsamic Glazed Tuna Steak With Avocados & Cilantro



Heat a pan over medium high heat and add some extra virgin olive oil. Season your tuna steak with salt and pepper then sear it on both sides for about 7-9 minutes (for a nice medium temperature), remove and set aside. In the same pan add some balsamic vinegar, a little mustard, fresh minced garlic, soy sauce, fresh squeeze of some limes, fresh chopped cilantro, and diced avocados. Cook for about 3 minutes while mixing and stirring. Plate your tuna steak on a plate, pour on your avocado and balsamic dressing, salt and pepper to taste and enjoy!

Salmon With Tiger Dill Sauce



My variation of the Tiger Dill Sauce goes great with salmon. Make your sauce by combining sour cream, dill wed, parsley, thyme, and horseradish. Heat a pan on medium high heat and add some oil, season your salmon with some salt and pepper and cook on both sides for about 6-8 minutes. Give it a fresh squeeze of lemon, top it off with your Tiger Dill Sauce, serve with whatever sides you'd like and enjoy!

Creamy Shrimp and Tomato Chowder



Heat a pan on medium high heat and add some butter. Dice some onions and cook them until soft and translucent. Add some canned tomatoes with the juices and stir until hot. Next add your peeled shrimp, some whipping cream, and just enough water for a nice soup consistency. Cook for about 3 minutes, or until it's hot enough for you, season with old bay and pepper, garnish with some fresh parsley and enjoy!

Grilled Chimichurri Chicken Breast



Brush your chicken breasts with some olive oil, season your chicken with salt and pepper and fire up the grill. Make your chimichurri sauce by mixing together in a food processor or a bowl olive oil, red wine vinegar, salt, pepper, minced garlic, chopped parsley, chopped oregano, and chopped thyme. Grill your chicken breasts on both sides for about 7 minutes or until there is no pink inside. Heat a pan on medium high heat and add some oil while your chicken cooks. Heat up your chimichurri sauce in the pan then set aside. When your chicken is done top it off with your chimichurri sauce, serve with some sides and enjoy!

Curry Shrimp & Pineapples



Heat a pan on medium high heat and add some oil. Season some shrimp without the shell with some old bay and curry powder. Dice some pineapples and red bell peppers and saute in the pan along with your shrimp. Add coconut milk, ginger, and fish sauce and cook on simmer for about 7-10 minutes stirring occasionally. Plate over top of some white rice, garnish with some basil and cilantro and enjoy!

Smoked Salmon Lasagna


Heat a pan on medium high heat and add some lots of butter and oil. Pan sear your salmon on both sides for about 5-7 minutes. Set your salmon aside and break it up. Mix it in a bowl with chives, onion powder, liquid smoke, and smoked paprika. Cook your pasta sheets according to packaged directions. Lets start making your layers. Start with a pasta sheet, then your bechamel sauce, then your salmon mixture, then your shredded mozzarella cheese. Repeat this layer 2 more times. Preheat your oven to 325 degrees and bake your lasagna for about 10-15 minutes. Enjoy! 

Bechamel Sauce
Heat some milk in a pot on med high heat. In another pot melt lots of butter, then mix in some flour stirring constantly on low heat for about 5 minutes. Slowly add the hot milk, lots of shredded smoked mozzarella, salt and nutmeg whisking constantly so there is no lumps in your sauce. Continue to whisk while on med high heat for about 15 minutes until you can't taste the flour, and your sauce has a nice consistency.

Sweet Glazed Ham


Buy yourself one of those Spiral Sliced Hams and lets uplift the flavor. Start by heating you ham in the oven according to the packaged instructions. Right before it's done heat a pan on med high heat and add lots of butter, cook some bacon until crisp. Remove the bacon and eat it as a snack, we need the bacon fat grease for flavor. Add some brown sugar and caramel into the pan along with the bacon fat grease and stir on low heat until the brown sugar dissolves. Take your ham out of the oven and brush your glaze over the ham and in between each layer. Make a sandwich or serve with some nice sides and enjoy!

Caprese Panini


Heat a pan on medium high heat and add some butter. Cook some thinly sliced tomatoes seasoned with salt and pepper for about 3 minutes on both sides. Butter 3 slices of bread on both sides. Now it's time to layer your panini sandwich. Place one slice of bread on a plate then top it with mozzarella cheese, fresh basil, and your cooked tomatoe. Now add another piece of sliced bread, mozzarella cheese, fresh basil, and another cooked tomatoe. Top it off with your last piece of sliced buttered bread and it's off to the panini maker, or George Forman grill. You can also do it like a grilled cheese in a frying pan! Enjoy!

Tots Cheeseburger Casserole



Preheat your oven to 400 degrees. Heat a pan on medium high heat and add some oil. Cook some ground beef along with some onions, green peppers, and add just a little cream of mushroom soup for extra flavor. Season with salt and pepper and saute for like 2 minutes ( you don't want to cook your beef all the way through because it will finish in the oven). Spray the bottom of a casserole dish with some cooking oil and put a layer of your ground beef mixture inside. Next add a layer of your american cheese, and finally top it off with your tater tots. Salt and pepper your tots, bake in the oven for about 40 minutes and enjoy!

Cream Cheese & Broccoli Soup



Heat a pot on medium high heat and add lots of butter, cream of mushroom soup, onion powder, garlic powder, broccoli, salt, and pepper and cook on simmer for about 12 to 15 minutes. Pour in some milk, cornstarch, and provolone cheese. Stir vigorously to mix the cheese in well. Continue to stir until you soup has met your desired consistency. Enjoy!
